Easy Spaghetti Squash Casserole

It seems that when the weather gets hot and the days long I loose the will to cook. I just want to stay by that pool until late and eat dinner watching the stars come out ( ok… or maybe watching the Bachelorette on TV… confession!). So, its very important that I have some go-to ‘clean’ recipes that can be whipped up quickly with minimal mess.

Ingredients

  • 1 fully cooked baked ( still hot ) Spaghetti Squash, flesh removed ( link for this recipe is above)

  • 4 pre-cooked Chicken Sausages ( I like the 'True Story' Sweet Italian Sausages)

  • 1 cup pre-made Marinara Sauce ( choose Organic if you can)

  • 1 cup grated Parmesan Cheese

  • 1/2 tsp Garlic powder

  • 1/2 tsp dried Thyme

  • 1/2 tsp Celtic Sea Salt

  • 1 Tbsp Olive Oil

  • 1 Tbsp Grass fed Butter

Instructions

  1. Thinly slice the Sausage and lightly sauté it in the Olive Oil until each piece is a little bit browned. They are fully cooked so this is just to make them a little crispy and extra yummy.

  2. Place the cooked Spaghetti Squash in an oven-proof casserole dish and sprinkle it with the garlic powder, thyme and salt. Add in the Butter then gently toss it all together so it's well mixed and the flavor is even spread throughout your Squash.

  3. Gently mix in the Cheese and Marinara, reserving a little cheese for the top.

  4. Finally add in the Sausage slices to the Squash and top with that sprinkle of cheese.

  5. Place under a HOT Broiler for 2-3 minutes to lightly brown the top of your yumminess.

  6. Serve with a green vegetable or light salad and a glass of wine! Perfect summer dinner...ooh, I might make it tonight!
