Dani's Roasted Tomatillo Salsa

I'm constantly inspired by my friends. Their families, homes, fashion, and of course their recipes. My friend Dani made this easy and outstandingly yummy salsa in November, and I've been SAVING the recipe for Cinco de Mayo.

One of the things I like about this recipe is you can make it all in the blender- perfect for when you have a margarita in one hand and a baby on the hip. Just me?! ok then...


Here's Dani serving this incredible salsa:

Ingredients:

12 Tomatillos, husked and rinsed

1 Jalapeño, halved (and deseeded if you're cautious of spice)

3 Garlic cloves

1/2 cup Onions, halved

1/2 cup packed Cilantro

Juice of 2 Limes

Salt and pepper to taste


Method:

Place tomatillos, jalapeño, onion, and garlic on baking sheet and

broil for 5-10 min- until browned. Alternatively you can grill everything for a few minutes too until it's blackened.

Then add all ingredients minus onions in Vitamix or blender. Pulse until just blended.

Stir in diced, roasted onions and serve!
