Summer for me is always a time for Pies. It feels like a lot of work tho to make a whole pie doesn’t it? That’s why I love Galette’s, a rustic French country pie. Galette’s use an all butter crust (find my fave recipe for All Butter Pate Brisee in the link) , rolled out and then simply folded around the fruit it holds.

This is seriously good served with sharp cheddar cheese!
Keep these covered until you’re ready to serve… but even then husband and sons may break off a corner!
Ingredients
6 Green Apples, peeled and sliced
3/4 cup raw washed sugar
1 tsp cinnamon
Juice and Zest of 1 Lemon
1/4 cup flour
1/4cup melted grass fed butter
1 recipe All Butter Pate Brisee (see link above)
Two baking trays or cookie sheets
Instructions
Preheat oven to 375. In a large bowl mix together the apples, sugar, cinnamon and flour. Toss well until everything is coated evenly and then drizzle with the melted butter.
Make up the Pate Brisee according to the recipe and divide into two equal balls.
Sprinkle flour directly onto the cookie sheets then roll out (one) ball of pastry (on each tray) to a 12inch diameter. It doesn't have to be perfectly round etc... these are to be rustic country style!
Pile the fruit into the center of the pastry circles, dividing evenly between the two and leaving a 1 1/2 inch border of pastry around the fruit. Gently fold the pastry into the fruit, moving around in a circle to create your galette.
Brush the Pastry with milk or cream and the give it a little sprinkle with raw sugar.
Bake for 25-30 mins until crust is golden brown and you can see the apple juices bubbling nicely. Cool for 20 mins before serving with either whipped cream or ice cream! Or cheese !
