Lemon Tahini Dressing(whole30)



This dressing. Well. It's really insane. You can put it on anything - salad, meat, potatoes, chips... or just eat it with a spoon. Whatever you feel is best. The dates bring a sweetness to the earth tahini, and the lemon balances that with its fresh tang!


There is a science to this dressing. You will add everything to the blender then blend. It will suddenly get grainy!




Then slowly add in ice cold water while you continue to blend. It gets SO creamy!



Once stored in the fridge this can get thick again. Simply add in ice cold water again to bring the creamy texture back.




Ingredients:

  • 1/2 cup Avocado Oil

  • 1/2 cup Tahini

  • 6 TBSP Lemon Juice ( about the juice of 1 Lemon)

  • 4 tsp Dijon mustard

  • 1 Mejool Date (pitted)

  • 1/2 tsp sea salt

  • 1/4 tsp ground black pepper

  • 2-4 TBSP ice cold water- more as needed.


Measure everything but the water into the Vita-mix or other blender. Blend on high until smooth. Gradually add in ice water 1 TBSP at a time until its smooth and desired pouring consistency is reached.


This will keep in an airtight jar in the fridge for up to a week.
