Homemade Chocolate (paleo)

Audrey has a knack for creating recipes that are easy, taste amazing and fit within the strict guidelines of the Paleo way of eating. You all know as well as I do that this Paleo Chocolate is going to be incredible! I love that now we can have all the pleasure and health benefits of chocolate (there are many!) without all damaging add-ins.


Audrey and I became friends a few years back in South Africa. We quickly bonded while sweating through grueling Crossfit workouts and soon became firm friends. Audrey exemplifies this ‘Brave Love’ idea. She is a mama to Kiara and Shilo.  A nurturing woman, she is raising them up to be strong individuals, allowing them to be who they are with confidence. I love her creativity and courage to pursue what she loves. And, I really miss her. Audrey lives in Cape Town, South Africa with her man Kirk and two sweetie-pie children.


 Audrey’s Paleo Chocolate

Store in the freezer, take out when needed.


Ingredients

  • 1 cup cacao butter (also called cocoa butter)

  • 1 cup coconut oil

  • 1 cup raw cacao powder

  • 1/4 cup Lucuma powder (it's a really amazing Peruvian sweetener) or 1/4 cup raw honey

  • 1 tsp Vanilla extract, powder or liquid


Instructions

  1. Over a double boiler on low heat, melt the butter and oil in a bowl. This must be done on low heat as the melting process needs to be slow. You do not want to burn your ingredients.

  2. Then remove from heat and add in your cacao and Lacuma powders, making sure to mix in thoroughly with a spoon.

  3. Once all combined you can add your optional extras (like nuts or dried fruit, etc).

  4. Pour into a bread tin sized container depending on how thick you are wanting the chocolate and place in freezer for an hour to set.

  5. Store in a container in freezer and take out when needed :)
