it’s the week before Christmas and our eldest son is Home at Last. Having him within reach for a bit means I’ll do everything in my power to boost him with vitamins and nutrition! Boys coming home always look like they never eat.
His first night home I put together a simple spaghetti with Ragu … with some hidden veggies and healthy fats.
My boys ate this up so fast and came back for seconds, which I’m never mad about when it’s good honest food. Try out this recipe and see if it’s a hit with your kiddos too !
Ingredients:
1 lb lean ground beef ( I get mine at Costco and choose the Grassfed option)
1 jar Marinara
1 onion , diced
1 medium zucchini, diced
4 spears of celery, finely diced
2 cloves garlic
1/4 cup olive oil
Small handful each fresh parsley+basil
1 tbsp fresh oregano
Method:
Over medium heat sauté the onions, celery and zucchini in the olive oil.
Get it going then turn down the heat , put the lid on and set it simmer on low until the veggies are translucent and cooked through .
Add in the meat and cook until browned.
Pour in the sauce and cook for 10 mins.
Finally sprinkle in the fresh herbs.
I cook pasta and tong in straight into the sauce, stirring to coat .
