If I could choose, I would probably only eat three foods: smoothies, cake, and SALADS. I just love a good salad. I created this simple salad by accident last week, and was practically doing cartwheels when I tasted it and realized how amazing it was. Also, Mother’s Day is coming up, this would be a great addition to your brunch menu.
This salad is filled with so many delightful items: Spring greens, snow pea shoots, strawberries, goat cheese and those fabulous raw hemp hearts. I used goat cheese with honey, but you could use regular too.

3 Health Benefits of Raw Hemp Hearts :

4 cups organic spring greens mix
1 cup snow pea shoots ( found in the salad section of your grocery store)
6 organic strawberries, thinly sliced
3/4 cup Chèvre goat cheese, crumbled
3 Tbsp hemp hearts
For the Dressing:
1 Tbsp organic strawberry preserves ( preserves have less sugar than jam)
1/4 cup olive oil
2 Tbsp balsamic vinegar
1/4 tsp freshly ground black pepper
1/4 tsp Celtic Sea Salt ( or your favorite Salt)
Optional: edible flowers such as Pansies and Nasturtiums
For the Salad: Layer all of the ingredients onto a pretty plate. No need to really toss much... just arrange it all so you can see how pretty everything is!
For the Dressing: Measure all of the dressing ingredients into a small jar, put the lid on and shake until well combined.
Drizzled the dressing over your salad and serve within 20 mins of dressing.
