cooling Yoghurt and Cucumber Rita



This fresh yoghurt dish is really great to go with curry. I love the extra protein, veggies and the cooling contrast to a spicy curry.


This is a great recipe to let little hands help with .

Rita:

- 2 Cups Plain Greek Yogurt

- 1 handful each Mint and Coriander

- 1/4 Red Onion, diced

- 1 Cucumber

- 1 tbsp Honey

- juice of 1 Lemon

- Pinch of Salt & Pepper



In a medium sized bowl, grate the cucumber. Add in the chopped herbs and onion. Mix in the yoghurt, honey, and salt a pepper.


Serve immediately or keep in the fridge for up to a week.
